Curly Parsley Spring Salad Recipe

Serves 2-4

What You’ll Need:
1 bunch curly parsley
1 bunch radishes
1/2 red onion
1/2 English cucumber
1 package cherry tomatoes
Extra virgin olive oil
2 lemons

Instructions:
Chop the parsley, radishes, onion, cucumber, and tomatoes into very fine pieces (it will be a labor of love).
Mix with 1 tbsp of extra virgin olive oil and the juice of 1 lemon. Taste and see if you’d like to add a second lemon (I prefer it with more lemon and usually use 2).
Season with salt and pepper.
