Shredded Carrot Salad Recipe
Serves: 2-4
I love this salad! Carrots are an antioxidant powerhouse and this salad makes a great side dish to any dinner.
What You’ll Need:
3-4 large carrots
1/2 cup shelled pistachios
1/4 bunch cilantro
1 tbsp sesame seeds
Juice of 1 lime
1-2 tbsp of apple cider vinegar
1 tbsp coconut aminos
1 tsp fish sauce
1 tbsp extra virgin olive oil
Instructions:
Grate the carrots (they are better freshly grated than store-bought grated!)
Add in the pistachios, cilantro, sesame seeds, lime juice, apple cider vinegar, coconut aminos, fish sauce, and extra virgin olive oil.
Mix well and enjoy!
